Does power supply matter for a lunchbox?

It's the main thing that matters. Add up the current draw of every module you plan to run — a lunchbox that looks fine on slot count can still starve hungry digital modules of clean power.

Will any rack-mount kit fit any device?

No — kits are model-specific, sometimes generation-specific within the same product line. Match the kit to your exact unit before ordering, not just the brand.
